Watermelon & Feta Checkerboard

Serving Size: 6
Ingredients:
20 1-inch cubes of seedless watermelon
20 1-inch cubes of block feta cheese
Flaky sea salt and freshly ground black pepper, to taste
Balsamic glaze, for drizzling
Extra virgin olive oil, for drizzling
Red chili flakes, to taste
Fresh basil, finely chopped
Instructions:
On a serving board or platter, arrange watermelon and feta cubes in an alternating checkerboard pattern (think: watermelon-feta-watermelon, and so on) to create a visually striking grid.
Once your board is laid out, season lightly with flaky sea salt and freshly ground black pepper.
Drizzle with extra virgin olive oil and balsamic glaze for a touch of acidity and sweetness.
Sprinkle red chili flakes for a hint of heat (optional, but encouraged).
Finish with finely chopped fresh basil scattered over the top for colour and aroma.
Serving Tip:
Serve chilled. This dish is best enjoyed fresh, just before serving. It makes the perfect cool, crisp, and salty-sweet start to any summer dinner party.
